Actually it doesn't feel all that different outside of TF2. Slightly slower but not really.

The main point is that your aim speed is nearly 300ms slower than a half decent player. You really need to work on your aim speed if you want to use hitscan weapons.
In a game context you will lose a hitscan 1v1 battle nearly every time.
Couple games tonight as Demoman. Not sure about my aim because I'm really lousy at predicting player movement and I think it's one of those things that I can either get good at over time or just be completely unable to.
Got a couple of direct hits but those were flukes as someone comes around a corner and get infront of one.
Mostly I stuck with the team and kept the other team back with grenade spam. I'm not good enough to use the sticky launcher yet. I'm dead before I'm able to detonate stickies and therefore unable to do anything with them.

You are supposed to look up when firing stickies and detonate them before they hit the ground.
Check your FOV setting. 90° gives the widest viewing angle possible that allows you to see more around you.

I had it on max (70) before but when I set it to 90 via console, nothing really changed.

Viewmodel FOV is completely different.
Go to Options -> Video -> Advanced Button -> change that FOV slider.
