A new UI has been released named SkyUI. It was released a few days ago (16th December) so expect bugs and the sorts. Looks fairly neat from the screenshots.
Code:
SkyUI is mod that aims to improve Skyrim's User Interface by making it easier to use with mouse and keyboard, less wasteful of available screen space and nicer to look at.

A different hud that makes you customize it more. Immersive HDU.

The aim of iHUD is to provide the immersive feel you get from having no HUD, whilst keeping the usefulness of having one. It takes the permanantly visible HUD elements such as compass and crosshair, and hides them when not needed. Hence the motto:

HUD when you need. HIDE when you don't.

I've literally only just installed Skyrim having bought it on the last day of christmas deals off Steam, but I keep getting the impression there's a couple of key mods that are needed to sort the game out.

Is this still true, even with the patches released by Bethesda, and if so, what's seen as the "must have" mods that you can't go without?

Mostly the ones I'd consider "musthave" are UI tweaks.

You can play without them ofc, but I'd say the UI was one of Skyrims weakest, if not worst points, so its well worth fixing up. Doesn't impact the actual game either, just makes some aspects of it less of a chore.

Then there are a fair few mods that make the game look nicer. Some are just tweaks that won't impact the game performance, but most increase the resolution of textures which can cause a performance drop. You'll have to browse and see what tweaks you can get away with on your system

There are also some nice gameplay/balance tweaks, especially for the magic tree. You might wanna have a play around with the game first though before you decide whether/what you want to change. In the case of magic its normally to fix the fact it doesn't scale very well with higher levels, but there are also mods which just buff some of the more underpowered spells. There is also Midas Magic - http://www.skyrimnexus.com/downloads/file.php?id=3413 which adds a load of new spells, some of which are really poorly balanced, but its not as if you are forced to use the new spells.

Lastly there are 100s if not 1000s of armour/weapon retextures/replacers. Again, you'll have to browse around to see which things you'll like.
