The answer is the same as any other scenario I suppose, practice makes perfect.
Plant the sticky at your feet a bit sooner and sticky jump away if it is at all possible. Otherwise go for the sticky at your feet sooner rather than firing in-front trying to hit him, and backup immediately laying stickies at your feet, if he follows you he's a fool.
I try the quick 180 to put the sticky behind me but it ends me up in all sorts of bother. My problem with pyro's is I can't resist popping a couple of nades to see if I'll hit it! Bad habit

Not bad habit as it greatly improves yr nade aim... ever since the pyro update i've been using nades way more. Downside indeed is that to down better opponents you really need the stikies and when using nades so much you tend to try the two-three nade method as you said, this makes you to relaern the sticky after a while but when yr having fun and results with it use the nades cuz if you have comfortable nade aim it greatly helps yr play.
Prepare to die a lot from bloody selfdamage tho... ive exploded myself thousands of times on a scout that gets too close, not every time actually taking him out ;O
